The Forgotten Menu tells moments in history through what was eaten, with recipes adapted from period menus and cookbooks. Questions, corrections, accessibility issues or copyright concerns are welcome at info@forgottenmenu.com.

Before you cook

Read the full recipe first. Scaling changes ingredient quantities, not pan sizes, oven temperatures, times or instructions. Converted amounts are rounded to kitchen measures, and some measures stay as written. US and Imperial measures differ; read labels such as “fl oz” or “pint” with their context.

Historical recipes are not automatically safe by today’s standards. Check allergens and ingredient labels yourself, and follow current food-safety guidance for meat, fish, shellfish, raw eggs and anything preserved or stored. Recipes containing alcohol are for adults of legal drinking age.

Sources, quotations and images

We name our sources and explain where a recipe has been adapted. Period quotations come from public-domain editions, checked against the page scans. Historical stories can be uncertain, and we say so where the evidence is thin.

Period illustrations are scans from public-domain books and are credited in their captions. Other pictures show the dish as the recipe describes it and may differ from the one you make.

Using our content

You may save or print our recipes for personal use. Please link to a page rather than republishing it, and ask before reusing our text. Public-domain source texts remain free for everyone; our adaptations, commentary and arrangement are ours.

Do not overload the service or attempt to access private systems. We aim for accurate, useful information but cannot guarantee identical results. Nothing here removes rights or excludes liability where the law does not allow it.
